Meet one of our favorite friends – who just happens to be the inspiration behind the award-winning La Luna Mezcal. Salvador Chavez has always been a great friend and supporter of Ernesto’s restaurants – any time we wanted someone to provide Mezcal education or show up for an event, Sal was the first person to say yes. He created La Luna with innovation, integrity, pride and love.
Salvador Chavez’ journey began with his father’s humble beginnings in Cotija, Michoacan. When he returned to visit in 2016, Salvador knew the way to honor his father, Michoacan, and his proud heritage was to create an authentic mezcal, one that those who understand the history of Mezcal would be thrilled to share with friends and family. La Luna is a beautiful tribute to the glowing moon that illuminated his father’s nights in the gorgeous hills of Cotija, symbolizing hope and guidance.
In 2019, Salvador built his own facilities and achieved recognition as one of the top Mezcal brands globally, winning seven double gold medals at the San Francisco World Spirits Competition. With his esteemed business partner, Adrian Gallegos, he has successfully brought a piece of his family’s history and culture to the world.
A much sought after speaker because of his approachable style, deep knowledge and reverence for Mezcal, you’ll be inspired by his story and his brand.
Celebrating the rich heritage of Michoacan through the art of Mezcal distillation combined with culinary creativity, Ernesto Delgado and Salvador Chavez have crafted a special batch of Mezcales that beautifully represent the centuries of friends who have gathered to enjoy the exquisite food and spirits of the region.
We’ll begin with a welcoming cocktail, crafted with La Luna Mezcal’s Black Label Ensemble.
Following, we’ll enjoy wonderful small plates created by Chef Eduardo with tastings of:
*Espadincillo
*Chino
*Tequilana
*And ending with the exclusive Special Batches made just for Ernesto Delgado in this amazing collaboration.

Enchilada Michoacana
A corn tortilla stuffed with Requesón cheese, topped with a delicious tomatillo sauce
and a touch of Mexican crema.
Corundas Michoacanas
In Uruapan, Michoacan there is a regional dish reserved for special celebrations. Corundas are like bite sized tamales, made with a tender masa dough infused with finely chopped vegetables. These are formed into triangles, filled with Cotija cheese and steamed in soft corn leaves. Served with Churipo, a sauce made with chayote, chiles, tomato and garlic.
Camarón con queso y tocino
A fresh large prawn filled with mild creamy cheese and wrapped in bacon.
A special treat all over Mexico!
Trocito de Carne de res
Beef chunks, braised in a delectable sauce made from chiles, tomatoes, onions and garlic, oregano, allspice and beer and allowed to marinate. The beef is then wrapped in banana leaves and cooked on low for about 3 hours until it can easily be flaked with a fork.
(In Michoacán, the beef is cooked in a rock-lined pit covered with banana leaves)
Calabasa en dulce
Made with pumpkin cooked in piloncillo (like brown sugar) and canela (cinnamon) until the sauce is thick and the pumpkin is tender and coated. This is the dessert all Mexican children hope for at the end of dinner. Sweet, sticky, and delicious with every spoonful
